Appertisation is an example of sterilization. It is the long-term preservation method at room temperature obtained by combining a heat treatment of destruction of microorganisms capable of reproducing at normal storage temperatures and a sealed package which avoids any recontamination of the product after sterilization.
The appertised product, stored at room temperature, requires little time for the core heat (microwaves in particular).
The appertisation technique is ideal for cooked and cooked products.
